The Farm

"It started from a barter deal…"

Ferma Borima was never planned. Owner Osman Ibryamov received cattle instead of cash payment in a barter deal — and so, almost by accident, began something remarkable.

Nine to ten years of passion, hard work, and deep respect for animals and nature transformed a small herd into ~200 Simmental and Montbéliarde cows — two of the world's finest dairy breeds — grazing on the northern slopes of the Troyan Balkan.

Since 2018, the farm processes 100% of its own milk on-site, after a 2-year development of proprietary production technology. The result: eight artisan dairy products with genuine Troyan Balkan character.

Why Simmental & Montbéliarde?

The breed choice is intentional. Both are among Europe's most prized dairy breeds — each with its own distinct milk character.

Simmental

Switzerland / Germany

A dual-purpose breed with excellent productivity. Simmental milk has high fat and protein content — ideal for cheese and kashkaval production. Calm temperament, good mountain adaptability.

Best for: cheese, kashkaval, butter

Montbéliarde

France (Burgundy)

A pure dairy breed with exceptional milk quality. Montbéliarde is preferred for AOC cheeses like Comté and Beaufort. It produces milk with a unique casein balance — milk with "character" that ferments perfectly.

Best for: yogurt, ayran, character cheeses
