Traditional Bulgarian Cheese Bread

Tutmanik is one of Bulgaria's most beloved traditional breads. Soft inside, crispy outside, with melted white cheese between the layers — irresistible for breakfast or as a starter. The key is quality cheese that melts beautifully.
Ingredients:
- ·500g flour
- ·1 sachet dry yeast (7g)
- ·1 tsp sugar
- ·1 tsp salt
- ·300ml warm water
- ·200g Ferma Borima white cheese, crumbled
- ·60g Ferma Borima butter, melted
- ·2 eggs
Method:
- 1Mix flour, yeast, sugar and salt. Add warm water and 1 egg. Knead into a soft dough.
- 2Leave to rise in a warm place 45–60 minutes until doubled.
- 3Divide dough into 3 parts. Roll each thin.
- 4Brush each layer with melted butter and scatter crumbled white cheese over the bottom two layers.
- 5Stack the layers in a lined baking tin. Brush top with beaten egg.
- 6Bake at 180°C (fan) for 30–35 minutes until golden brown.
- 7Rest 10 minutes before slicing.
Tip: Serve warm with a glass of Ferma Borima yogurt — the perfect Bulgarian breakfast!
